If I lie on my resume about having a degree and my boss finds out, could the company I am contracting for legally pursue me?

You could be sued (e.g. to recover some or all of your salary or recruitment fees or training costs) and potentially (unlikely, but possible) face criminal charges. What you did is fraud and could even be viewed as a form of theft: obtaining money (your pay and benefits) to which you were not entitled through false pretenses.
