Can I charge a dental office interest?
I had a root canal performed and when it was completed I was charged $1730, which I paid in full the same day. The dental office claimed I did not provide them with any insurance informationwhich I did they have held onto my money waiting for the insurance company to pay them, they claim I cannot
be refunded until the insurance pays.

No, you can only charge interest on money someone owes you or is holding from you when there is a written agreement providing for interest in this situation. If there is no agreement, there is no interest.
In any event, interest rates are so low right now that even if you were to receive bank rate interest, that would only be pennies at most.
